you jiao 油角

14th Feb is our Chinese New Year, this year is the year of Tiger. Glad that is approaching, as I cannot wait to eat many Chinse New Year foods. In particular this one, is called Gok kai in Cantonese, or You Jiao in Mandarin. Its more of a deep fried flour pastry wrap in peanut, coconut, sugar. Home made version is always definitely better than brought, as you can control the sweetness. (Jau Gok in wiki)

農曆新年快要來臨了﹐跟你們分享一下我喜歡的新年美食。在英國﹐很難買得到我想吃的東西的﹐就算有﹐都是很貴的。加上自己做﹐比較乾淨﹐還有甜度都可以自己調配呢﹐多好!

油角﹐粵語是 角仔。

其實﹐這個已經是上年拍下來的照片﹐沒有時間分享﹐就只好現在囉! 希望你們都可以弄弄看 =)

這個食譜是一位網友-球球﹐分享的。


低粉 300g
油 106g
水 92g (水份﹐要看你的面糰是否夠濕潤﹔如不﹐就要加多一點)


碎花生 30g
白芝麻 30g
椰絲 10g
白砂糖 40g
所有東西混合﹐即可。

做法
先倒油入低粉裡﹐再慢慢加水﹐揉成糰。
就可以拿一部份面糰﹐桿開成薄塊。
利用餅乾模或是杯子﹐按出適合大小﹐將餡料放在中間。
然後對封﹐按邊﹐從一邊開始扭- 按- 扭-按﹐直到封完。
就可以拿去炸了﹐炸到金黃色﹐然後浮面﹐就可以了。
油溫大概中大﹐因為如果小火的話﹐油角可能會吃油的。
如果﹐想鬆脆一些的話﹐可以回炸多次的﹐看你喜歡囉。
